3 Day Refresh: Day 3 and Final Results!

I started this morning the same as before. I hesitantly got onto the evil scale and to my surprise: -2.8 pounds! Holy crap, that was a great way to start off the day.

Meals were pretty much the same, although this time I remembered to chug that fiber sweep like a college kid at a keg party. Ahh, college days paying off in more ways than one. The fiber sweep was much more tolerable this time around. The first day I blended it in ice because I read it on a blog somewhere and it wasn’t terrible.. but kind of grainy. Looking back though, I would either use the blender or chug chug chug. If you blend it you don’t have to worry about it morphing into something like an alien foreign substance. I think I’d still drink it fast just to get it done and over with.

I skipped my afternoon snack because I honestly forgot! How does that happen when you are consuming less than 1000 calories? Probably because my lunchtime I had reached my fiber goal for the day. But I really wasn’t hungry and that was just insane to think about.

F I N A L    R E S U L T S

This morning, after Day 3 I weighed myself and was down another pound. So in total I lost 4.8 pounds in 3 days. Not too shabby. It definitely has motivated me to stay on track. As far as energy goes, I kind of feel the same really. Then again, I have a toddler so I’m not sure if that’s a fair assessment. Overall, I think it’s a good program if you need to kick start your workout/diet or if you need a little motivation. I honestly had no gas or unpleasant issues, but I was eating healthy for a while and slacked off 2 weeks then got on this program. So I’m not sure how it would work for others but I’m confident that the results would be worth the effort.

3 Day Refresh: Day 2

I woke up on Day 2 and weighed myself right after emptying my bladder (which is what my doctor said was the best time to weigh yourself). Down 1 pound. Woo hoo /sarcasm.  I guess I should have expected it though, I mean, I did have that cookie after all.

No biggie, I’m used to that evil scale taunting me. So, I started my day off right, nice glass of water and a yummy glass of Shakeology (with cherries!). Ahhh, deliciousness in a glass.

Fiber Sweep time was next. I had went to the playground with my son to meet up with some mommy friends and their kids earlier. So I got to the Fiber Sweep about an hour later than usual. I mixed it up, sat down and checked Facebook. Then I went to drink it and- oh my God!! This disgusting glob of fiber lay in the cup, so much thicker than molasses. I was horrified. How in the world am I going to be able to drink this now? It’s almost like a milkshake; a fiber shake *gag*. I had another glass of water and chased it with each drink I could take of the Fiber Sweep; it felt like I was chugging applesauce, but like 100 times worse. If you take one thing away from this entire experience, chug that Fiber Sweep- FAST

Needless to say, I had lunch much earlier than I should have. I had to get that taste out of my mouth! I did wait like 35-40 minutes. The Vanilla Refresh was much welcomed, along with my apple, hummus and cucumber. I had cucumber and hummus as a snack later.

Dinner was another Vanilla Refresh (I added nutmeg- it was okay) and dinner was the same as yesterday: veggie stir-fry. I felt great in the evening and was not hungry at all. I did struggle with wanting to snack out of boredom- one of my personal demons. However, I managed, thanks to many other tasks I have to do in my day.

So, that was Day 2. Everything was fine except that horrible experience with the fiber sweep. Please, please, PLEASE remember to chug that stuff down quickly if you do this program. Learn from my mistake!

3 Day Refresh: Day 1


Following my previous post, I was unsuccessful in keeping up the momentum with a 2nd round of the 21 Day Fix. So I thought that the 3 Day Refresh would be a great way to kick start another round of the fix since I kind of neglected my portioning for the last 2 weeks.

The 3 Day Refresh is a program from BeachBody. The website says this about the product:

“In just 3 short days, you can get your health, energy, and vitality back on track—all without starving. You’ll conquer your cravings. Get a flatter belly. Feel lighter and more energized. And your clothes will fit better. The Complete Kit comes with 3 packets of Shakeology®—your choice of 6 flavors (we recommend Chocolate Vegan or Tropical Strawberry Vegan because plant-based proteins are often easier for the body to digest), 6 packets of Vanilla Fresh (high-protein shake), 3 packets of Fiber Sweep (digestive health drink), and 1 Program Guide.”

You start your day with drinking a full glass of filtered water and then within an hour of waking you will have your daily Shakeology and a serving of fruit (the fruit can be mixed in or eaten separately).

An hour after that you can have herbal tea but it is optional. They recommend you drink lots of water during the day.

Then an hour after that (or after breakfast if you skipped the tea break) you take the fiber sweep mixed in with 10 oz of water.

An hour after that you have lunch! One Vanilla Fresh shake, a serving of fruit, vegetable and healthy fat.

Then an hour later you have an afternoon snack (vegetable and healthy fat).

Then dinner (there are several options to choose from and they all consist of vegetables and broth (optional). And you have a Vanilla Fresh shake with dinner as well.

So that’s the program in a nutshell. My first day went okay. Shakeology has always been effective in curbing my appetite and suppressing cravings. I got the chocolate vegan formula and it tastes a little bit richer than the regular chocolate (at least that’s my first impression).

I was not looking forward to the Fiber Sweep at all. I was such a baby about it; I opened the packet, poured it in the glass of water and smelled it. Ugh, why did I do that? However, upon tasting it, it really wasn’t terrible. It kind of had an herbal tea- lemony chamomile taste to it. I wouldn’t drink it all of the time but it still wasn’t like spooning cod liver oil down your throat.

Lunch was simple: Vanilla Fresh, 1/2 an apple, celery and hummus.

I had a craving for hummus so I had celery and hummus for my snack too.

Then for dinner I had Veggie Stir Fry. Green beans, carrots, and red bell pepper cooked with grated ginger and garlic with olive oil and salt. It was definitely not the “hearty dinner” I felt that I deserved after the small amount of eating I did for the day but I didn’t feel famished or really hungry so it was just what I needed.

I did cheat though. I was shopping at the grocery store and I had a cookie that they were sampling in the bakery. I hadn’t had my snack yet and it had been a couple hours since lunch and I was weak. Even counting that into my eating, I had 909 calories for the day.

In case you are wondering if I had any ill effects from the Fiber Sweep, the answer is no. The program guide cautions that some people may feel bloated for the first couple of days and be gassy but I had nothing like that. I did have to go to the bathroom shortly after lunch but it wasn’t urgent and it wasn’t like how a laxative would have you feel. This is an increase of fiber, a nutrient your body needs. The Fiber Sweep just gives your body more fiber, that’s it.

So that was my first day, come back to see how I finish out the program!

21 Day Fix: Round 2

I love the 21 Day Fix.  It’s easy to follow, ensures I eat good food and the workouts are challenging but not too demanding. When I first started the workouts I gave up 9 minutes into the first workout. Now I’m finishing all of the workouts and I’m able to modify less and less with each day. I don’t have to look at the scale to know that I’m getting stronger, I’m simply able to do more in my workouts and have more energy throughout the day.

The last few days I’ve been cheating on the nutrition plan and I’m hoping I can stop that soon. I’m still following the plan but then I indulge in something that I shouldn’t. Hey, we’re all human, it’s normal to cheat. It’s not okay to cheat though, and this is just part of what I have to learn on my journey. I’ve thrown out most of the bad foods or given them to others, but we still have a few things that my husband likes. My husband can afford to eat all the junk food in the world with his metabolism. And that’s another battle I find myself fighting. I see that so many more people succeed when they workout and eat healthy as a couple or even as a family. So, while I don’t have a significant other interested in my journey he is supportive and I’m thankful for that.

So if you’re thinking of losing weight or struggling to shed some unwanted pounds, don’t beat yourself up over it. We’re not perfect and sometimes we fall off the wagon. But it’s up to you to pick yourself up and get back on it again. One bowl of ice cream isn’t going to kill your whole diet because tomorrow is another day. You Can Do It!!!

I started my first Beach Body program on July 28th, 2014

This post was first written on August 22nd, 2014.  26 days into my journey and I’ve lost over 10 pounds, several inches, a pant size and I’ve gained so much more self confidence, awareness to the benefits of good health and I have a lot more energy to get through the day.

I didn’t sign up to be a coach just to make money. In fact, I have never done “sales” and could never be that kind of person. The reason why I did sign up though, was to help educate others of how important it is to be healthy and to live an active lifestyle. I know that sounds cliche, but with people dying of cancer and heart related problems at alarming young ages, it really is time to do something about it. I’ve lost 2 people in my family to cancer and they were both under 55. A friend of mine lost a good friend of his to cervical cancer at 30.  30!! And honestly, weight and overall health has a lot to do with mortality.

I don’t know about any of you, but I want to watch my son grow and meet my grandchildren and great grandchildren. My dad never got to meet my husband or son and my stepdad passed away just months before my son was born. I feel that by taking control over my health I can alleviate the health conditions that I do have and maybe prevent anything more.

Mini Coupon Guide

So you want to save money but you don’t have time to sit there in your living room floor clipping coupons and assembling a binder organized by categories. I understand completely! I was in that same boat before, and now with a toddler it is near impossible to stay organized!

First of all, you need a system of organizing the coupons you will clip or order (we’ll get to that part next). If you have the time you could purchase a heavy duty binder, baseball card sheets, and then sort out your sections by category. However, I know you’re busy, who has time for that?

So here’s my suggestion: envelopes. Grab a few envelopes and label them with the stores you frequent most. I have envelopes for Target, Stop & Shop, Walgreens, CVS, and Rite Aid. This way when you get your coupons you can put them in the appropriate envelope and they fit easy into a purse.

So coupons. If you have a printer you can print your coupons. You would be surprised what coupons you can print! Also, you can print in black and white if you don’t want to change your color cartridge all of the time. Websites that you can print coupons: Coupons.com, Red Plum, and Smart Source.  There are a ton of others, but those are my top 3.

My favorite method is to order coupons online. While it’s illegal to sell coupons, these companies charge for their time and effort in collecting and sending you coupons. Coupon prices vary from .05 to .20 each depending on the value of the coupon. For example, $1.00 off of a product is generally .08 while $3.00 off would be about .15 or .20, depending on the popularity. The great thing about the following sites is you can order 1 coupon or 100, and the shipping is a flat $1.00 for loose coupons. You can also buy whole inserts for a little more. Coupons Clipped Cheap and Twin Clippers are a couple of my favorites.  They are from PA and VA so if I order Sunday night I’ll get them by Thursday. There are many others out there that you can find simply by conducting a Google search.

Do you want to get the most bang for your buck but you don’t want to scour through the Sunday sales ads from each store? Then let me introduce you to Living Rich with Coupons and Coupon Mom. LRWC is a wonderful site with so many cool features. You can go to the grocery tool comparison and type in “Huggies Diapers” and it will show you a list of stores with sales for that item and then once you select the stores it shows you the price, what coupons are out there (with links to said coupons) and what your deal is. There is also a “shopping for free roundup” organized by store as well as pages with paper products and diapers.

Coupon Mom is great because of the organized store lists. You do have to sign up to become a member, but it’s free, and so useful!

Once you find a deal you are going to use, write it on your envelope! For example: “Viva Paper Towels 8ct, $1 coupon + $1 store coupon + $5 gift card when you buy (WYB) 2” Or you can write anything really, even if it’s just the item you are buying. It’s that easy, right?

I should also mention printable coupons can be printed twice from each computer. To save paper, 3 coupons print per page, and if you print from target’s coupon site you can print 4 per page. Usually you can print the offer again once the coupon resets, which is usually monthly. The coupons on the very last page of the site will show the last coupons you printed and which ones have reached their limit.

That’s my mini guide (guess it wasn’t so mini) But really here’s all that you need to know:

-Sort coupons in envelopes by store and write the deals on your envelopes
-Order your coupons online if possible! Printing is also a great option!
-Check the local ads by going to sites that have done all the work for you

I encourage you to read the ads also, and all of the stores have their ads on their websites now. There are so many ways to save the most money, but by doing these 3 steps you’re sure to save more than what you were before (which probably wasn’t anything!)

In the next few weeks or so (depending on renovation and holiday craziness) I will try to develop pages for each store and the information about their coupon policy, the different ways to save, and anything else useful.

Crock Pot Lasagna

So I haven’t had a kitchen for about a month.  It’s starting to drive me crazy.  Fortunately, everything should be done within the next week.  In my desperate attempt to not eat out for every meal I have looked online for some great crock pot recipes. I was shocked that there was a lasagna that could be made and it turned out great!

The meat has to be cooked, (we have a camp stove so that helped me) but the lasagna noodles should remain uncooked. As long as there is sauce covering them, they will soften and come out perfect. Since every crock pot cooks different, I recommend you try to keep an eye on it the first time you make it so you know how long you should cook it for future times. Trust me, you will want to make this again and again!

Crock Pot Lasagna

1 pound ground beef, browned
1 large onion, chopped
1 small (6 oz) can tomato paste
1 jar (24-28 oz) of pasta sauce
1 12 oz package lasagna noodles
12 oz ricotta cheese
1/2 cup Parmesan cheese
16 oz shredded mozzarella cheese
12-16 oz water

(you can also season with oregano, garlic, Italian seasoning, etc)


* Brown ground beef in a deep skillet over medium heat. Drain

* Add onion, tomato paste, pasta sauce, and desired seasonings. Cook until heated through

* Slowly stir in the water. Sauce should still have some consistency

* In a separate bowl, mix ricotta, Parmesan, and mozzarella cheeses

* Spray a light coating of cooking spray into crock pot

* Spoon meat and sauce mixture on the bottom of the crock pot

* Add a double layer of uncooked noodles. Break pasta to fit (see photo below)

* Top noodles with cheese mixture

* Repeat layering of sauce, single layer of noodles, and cheese mixture until all ingredients are used (make sure you completely cover the noodles with the sauce mixture, otherwise exposed noodles may over cook)
