Quick Lunch Option: Chicken Salad

I’m sorry for the lack of posts last week. This coming week will be slow as well, as my mom is coming to visit me for a few days. I’ve been spending all week cleaning and getting ready for her stay. It’s amazing what some of us do when company is coming over.

Anyhow, earlier this week I whipped up a batch of chicken salad while the little one was napping. This is quick and easy to make and it’s the perfect thing to go to for a healthy alternative for lunch or a snack. I typically spread it on a tortilla shell, but it’s great on regular bread, a pita pocket, or just in a bowl. I don’t have a picture of what I made so I’m going to attach a stock photo of something similar so you can get an idea of what it should look like. Enjoy 🙂

Chicken Salad

1/4 cup low fat mayonnaise
1-2 teaspoons black pepper
2 teaspoons water
1 cup cooked chicken breasts, chopped
3/4 cup chopped apple
3/4 cup grapes, halved
1/3 cup celery, diced
3 tablespoons raisins

********************************************

* Mix mayonnaise, water, and black pepper until well blended.

* Add remaining ingredients to mixture, mixing all ingredients well.

* Cover, refrigerate for at least an hour and enjoy.
